From Chapter 27 of The House of Roses

MAMA'S FIRE & ICE

    Ingredients:
  • Cup White Vinegar
  • Teaspoon Celery Salt
  • Teaspoon Celery Seed
  • 1 Teaspoon Dry Mustard
  • Teaspoon Pepper
  • Teaspoon Salt
  • 4 Tablespoons Sugar
  • Teaspoon Cayenne Pepper
  • 2 Cucumbers Peeled and Sliced
  • 1 Tomato Sliced
  • Sweet Onion Sliced
Now here's a recipe that I stole directly from my mother - secret ingredient and all. Don't tell Josie, but Cayenne Pepper isn't all that hard to guess as far as what makes this dish on the fiery side. She tried her best to get it out of me, but most cooks would probably figure it out on their own. Call me bad but, Josie is awful fun to tease and her inexperience in the kitchen just makes it way too tempting sometimes.

Another simple recipe and one that you want to prep ahead. Boil all of the ingredients - except the vegetables of course - for 1 minute and pour over the cucumber, tomatoes and onion. Refrigerate for at least 1 hour before serving.

As Josie said though, the big deal with this dish is fresh - homegrown if you got 'em - vegetables. I grow Heirloom tomatoes in my garden along with the cucs - English No Seeds are the best - and fresh sweet onions - or Vidalia's if in season. But whatever the variety, the fresher the better is definitely the rule in this case.
